Orchard Fresh Hot Italian

Tuscan White Bean and Kale Soup

Serves 6-8 people

Ingredients:

 

  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Hot Italian Orchard Fresh Bulk Sausage
  • 1 Medium Onion, finely diced
  • 2 Large Carrots, finely diced
  • 2 Large Potatoes, finely diced
  • 6 Cloves of Garlic, finely diced
  • 2 Bay Leaves, finely diced
  • 2 15oz Cans of White Cannellini Beans (Drain & Rinse)
  • 2 Bunches Kale-no stems, ruff chop
  • 1/2 Gallon Good Chicken Stock
  • Salt & Black Pepper to taste
  • Loaf of Garlic Bread

Preparation

Get a large soup pan hot pour in oil and add ground sausage. Cook until brown then set aside. In the same pan, add a little more oil and sauce your onions, carrots and garlic until translucent then add salt and black pepper. Then add bay leaves, chicken stock, beans, kale & sausage back into the pan & check seasonings. Bring to a boil. Simmer until the beans are tender and serve with parmesan cheese and garlic bread.
